Herb Chicken

Serves: 3 + leftovers Prep and cooking time: 45 minutes

Ingredients

750g boneless, skinless chicken breast 8 teaspoons olive oil Celtic salt, to taste 8 tablespoons fresh herbs (rosemary, oregano, parsley, thyme or sage) 5 slices of bread for bread crumbs Frozen peas

Recipe

  • Preheat the oven to 200 degrees
  • Slice the chicken into thin fillets
  • Add chicken to mixing bowl
  • Prepare herbs
  • Blend the bread into crumbs
  • Drizzle chicken with the oil, salt, herbs, breadcrumbs
  • Place on a baking sheet lined with foil
  • Roast the chicken for about 20 minutes, flipping the pieces over half-way through the process
  • Cook the frozen peas
