Herb Chicken
Serves: 3 + leftovers Prep and cooking time: 45 minutes
Ingredients
750g boneless, skinless chicken breast 8 teaspoons olive oil Celtic salt, to taste 8 tablespoons fresh herbs (rosemary, oregano, parsley, thyme or sage) 5 slices of bread for bread crumbs Frozen peas
Recipe
- Preheat the oven to 200 degrees
- Slice the chicken into thin fillets
- Add chicken to mixing bowl
- Prepare herbs
- Blend the bread into crumbs
- Drizzle chicken with the oil, salt, herbs, breadcrumbs
- Place on a baking sheet lined with foil
- Roast the chicken for about 20 minutes, flipping the pieces over half-way through the process
- Cook the frozen peas
