Acid Watcher Nicoise Salad

Serves: 3 + lefovers Prep and cooking time: 12-15 minutes

Ingredients

8 teaspoons olive oil 8 tins of tuna 2 teaspoon Celtic salt, plus more to taste 4 jumbo cos lettuce leaf 8 large eggs 650g green beans 2 large carrots 1 cucumber, cut into half moons 40g fresh basil leaves 16 tablespoons chopped fresh parsley

Recipe

- Put 8 eggs on to boil for 5 minutes (hard-boiled) - Trim and chop the green beans into 1cm pieces - Put the green beans on to boil - Chop the lettuce leaves - Grate 2 large carrots - Chop the parsley

  • Cut 1 cucumber into half moons
  • Drain the tins of tuna
  • Toss the lettuce, eggs, green beans, carrot, cucumber, basil and parsley into a large bowl for service
  • Divide the salad between plates, sprinkle with salt, top with the tuna, and serve
