Fish and Chips

Serves: 3 + leftovers for 3 Prep and cooking time: 45-60 minutes

Ingredients

1kg fish fillet (tilapia, trout, plaice, branzino or sole) Celtic salt, to taste 10 teaspoons chopped fresh rosemary 6 teaspoons olive oil 6 thin lemon slices 5 sweet potato

Directions

  • Preheat the oven to 200 degrees
  • Peel, wash and cut sweet potatoes into strips (fries)
  • Sprinkle the fillets with salt and rosemary and drizzle with half of the oil
  • Place on a baking tray lined with a generous sheet of foil
  • Place the lemon slices on the fish and close the foil around it, creating a tight pocket
  • Sprinkle the sweet potatoes with salt and drizzle with the remaining oil
  • Place the fries on the baking sheet with the fish on a piece of parchment paper to avoid sticking
  • Bake for 30 minutes, turning the fries with a spatula every 5 minutes
  • When the fries become soft on the inside and a bit crunchy on the outside, remove the pan from the oven. The fish should be tender and separate into pieces easily
  • Serve immediately
