Brocolli Breakfast Omelet

Serves: 3 Prep time: 5-10 minutes

Ingredients

1 teaspoon extra virgin olive or coconut oil 10 large eggs 3 handfuls of chopped broccoli (room temp’) 3 teaspoons grates Parmesan cheese Handful of fresh spinach 3 slices toasted whole-grain bread

Directions

In a small bowl, whisk the egg and egg whites. In a nonstick pan, heat the oil over medium heat. Add the broccoli and spinach to the pan and saute for about 1 minute. Add the egg mixture and Parmesan and cook, stirring slightly, until the eggs are fluffy, about 1 minute more. When the eggs are cooked to your liking, remove from the heat and serve with the whole-grain toast.
